How to choose/use channels?

I am a bit unsure about how to use the channels for my Cayenne LPP payload. Can I choose any channel (<100) for my sensors? Or are there any limitations in choosing a channel?

When looking at the “Device with 2 temperature sensors” example (Cayenne Docs), why do they use channels 3 and 5 instead of e.g. 1 and 2?

you can use any channel number you want but do not use same number for two different channel.
