Does anyone know if there are any options to self-host cayenne on your own hardware such as a VPS? I would like to host locally to keep latency low and so I can continue using my VPN stuff etc

not yet. but it is in cayenne roadmap.
Do you know what sort of time frame? I am looking at putting a system together now and if I learn to use cayenne in the meantime and then put onto my own vps when available.

Cayenne is not available for VPS hosting. What are you looking to accomplish - you can PM me with details?
